  By the time the Ganglion is shipping, there will be a tutorial on the OpenBCI 'docs' site, detailing all the steps needed to get started hooking up the Ganglion and running the GUI software. Many of the steps are similar to what is already documented for the 8 or 16 channel kits. See,

  The Ganglion does not use the 'dongle'. Instead it communicates over BLE Bluetooth Low Energy, which is present in all modern computers and mobiles.

  
  

  Looking at your list above on your original post, you could add: Ten20 paste (for cup electrodes) or some type of headset or bands to hold on dry electrodes. Battery pack (included). Downloading the OpenBCI_GUI software onto your computer. Etc.
