Sleep Staging

Hello Fellow BCI Members!
I'm writing to you today because I am trying to accomplish something and I seem to be a little stuck.
I'm planning on a Cyton+Daisy with Adapter on the All In One EEG Kit to measure EEG and EOG. My question is: how do I make sure that the information is being recorded, in what file format is the information recorded and how can I export this data into a series of 30 second epochs or "frames" so I can do sleep staging?
I appreciate the in depth responses for anyone who can help.

And there is a pdf on that thread, showing how one sleep lab uses EC2 or EC3 paste and elastic wraps for overnight recording. The "headband kit" mentioned in the title of the thread, was just the starting point for the conversation. Almost all sleep labs use regular cup electrodes and paste, not dry electrodes; as with the velcro headband kit.
Sleep staging needs to store data in SD card, and select write to SD card in GUI.
The data format is TXT. You can find software to convert it to EDF format.
