Channels stuck at "RAILED"

I'm trying to get my new 32-bit board to work for the first time with the basic setup, a ground electrode on my mastoid, a reference on my earlobe and a measurement electrode on my forehead. I place the electrodes, turn on the hardware, then start the software, but am having a lot of trouble getting my readings to leave the "RAILED" state. Sometimes if I remove all the electrodes it will eventually settle down to a reasonable value around 1 uV RMS. Then the measurements seem sensitive to me moving nearby or picking up the electrodes by the wires. Changing settings (enabling/disabling different channels, changing gain) also seems to give the system a kick that can end in the readings settling down.
On the one occasion I managed to have all three electrodes placed, and the readings not railed, it also didn't noticeably react to my heartbeat, breathing, blinking etc as I would have expected it to.
Does anyone have an idea of what I'm doing wrong? Terminology / conceptual corrections also welcome.
