Cognitive Neuroscience Research

Has anyone used OpenBCI hardware for cognitive neuroscience research, specifically in memory and/or perception? I'm curious if 16 channels is enough for research in this area. I'm a psychology PhD student in an international distance learning program, so I have to teach myself quite a lot of information, but I currently work in research in a university lab that uses EEG in rats and the PI has been helping me figure out how to go about EEG research in humans for my program. She's a physiologist, though, so she's not sure how EEG would work in the psychological sciences. If I'm not mistaken, I believe a book I was reading said 64 channels is the "norm" for social neuroscience and personality psychology? But is it possible to use up to 16 channels in perception and/or memory? I'm having a hard time finding any information about this. I'm very new to EEG in humans, so please forgive me if it sounds very basic.
